1 egg
400 gr (14 oz) of flour: mix of white flour + semolina (alternatively, only all purpose white flour)
1 boiled medium size beetroot (alternatively, 50 gr / 2 oz of boiled and squeezed spinach)
--> the beetroot has to become a pulp so if you don't have a mixer you need to use spinach

100 gr (3.5 oz) of Mascarpone cheese (alternatively, cream cheese)
50 gr (2 oz) of Parmigiano Reggiano cheese
100 gr (3.5 oz) of Brie cheese
100 gr (3.5 oz) of Blue cheese


Rolling pin (alternatively, an empty bottle of wine, previously washed)
Plastic wrap (alternatively, a metal or plastic bowl)
Microwave (alternatively, a pot + a metal bowl)
Mixer (no need if you're using spinach instead of beetroot)

Wonderful evening in a safe, beautiful and very friendly setting that will live long in the memory. Frank Sinatra karaoke to Boteceli, lovely food and a masterclass in pasta making. Thank you Debora and family for a thoroughly enjoyable night 😀

Debora was simply wonderful, and dealt effortlessly with the 6 different cooks virtually. Everyone's farfalle turned out really well, and the 4 cheese sauce was delicious too. Highly recommend this experience.

I made beet farfalle with cheese sauce with Debora on a Friday afternoon- my family enjoyed a great dinner, and I had a wonderful afternoon cooking and chatting with Debora! I wish I could fly to Rome to be there in person, but the online class was the next best thing. I highly recommend!

My wife and I have never made pasta from scratch before, and this was a very fun way to learn it! Debora was so gentle and made the class easy to follow. She put us at our ease, so we felt comfortable to ask questions. Her daughter was so lovely too, and provided interesting tips on how Italians match wine with food. Finally we enjoyed the fafalle we made - so delicious with the four-cheese cream!!!!! We also tried to make the recipe again and engaged our children too - we had lots of fun!!! Thank you so much Debora and Fiamma!
