Hello, It’s Andrea here! I'm an Italian pizza chef, helping sourdough pizza makers to build their own recipes, step by step. In 2014 My passion for baking started after taking part of a very informative pizza course, in Italy, that literally opened up my mind into this world. Since then I've been making pizzas almost everyday, practicing & learning different methods to find my own. The same year in April my girlfriend -Martina- and I decided to move in London for an experience. It was very exciting moving from a little town close to Bergamo to a big city! In 2015 While I was managing a pizza place in central London I created my first (and only) sourdough starter from scratch, Johnny. At that time sourdough wasn't so popular in Uk so I started to self learn about it day by day and in June Martina and I decided to open our first pop up store in Old Street: One n One Fashion n Pizza. We created a cozy friendly environment where people could shop independent small brands & eat our traditional Italian sourdough pizza. In 2017 We opened our permanent shop in Spitalfields where in October of the same year I've started teaching "How to Make Sourdough Pizzas". It was great to meet over a thousand people -coming from all over the world- passionate & curious about sourdough. I shared with them all my knowledge about pizza and “a piece of Johnny”! In 2020 I wanted to do more and share my passion & knowledge to a larger group of people every single day so I opened my first Instagram account @theheartofpizza. I called it “The Heart of Pizza” because I believe the dough base -the heart- is the most important part of pizza making process. To me It doesn’t make sense having fancy, tasty & high quality toppings if you don’t have something as delicious underneath. My aim is to encourage people to build up their own pizza recipes giving them the right skill & self confidence to do it!

I chose the 1:1 zoom session with Andrea and he was fantastic! really knowledgeable about all things pizza & dough related! the class was engaging, fun and informational! It was also a real pleasure communicating for the two days with Andrea - there are no silly questions and he was more than accommodating in answering any that I had even prior to booking the class, so a massive thumbs up there too! I will definitely be doing the sourdough masterclass at some point with Andrea - highly recommended :)
Andrea's lesson was fun and informative. We learnt a lot from the experience, and I would definitely recommend it.
This was a 1 on 1 event from home via zoom call. Andrea split the lesson over 2 days, with an hour spent on preparing the pizza dough on the first day, and then stretching and cooking pizzas the following day. The whole experience was brilliant, and will have a permanent impact on our cooking for life. The experience was a birthday present to my girlfriend, who was dying to hone her sourdough making skills. She later admitted that it’ was one of the best presents she’d ever had. Andrea is warm and friendly, clear and witty. He has an obvious passion for making pizza, and a deep understanding of the science behind the intricacies of baking with sourdough. His knowledge came through clearly when inquiring about our previous experience and current baking practises. More than this, from one instructor to another, Andrea is an exceptional teacher. He came across in a warm, supportive and encouraging manner throughout; his demonstrations were perfect and clear to see, and he was able to adapt his teaching to suit the audience. I would not hesitate to recommend this class to anyone who loves good food, tasty pizza, an interest in baking, has their own sourdough starter, or even as a fun experience or gift. At the very least you will enjoy yourself, and it may permanently transform your cooking experiences forever.
